Breakfast bread cups (pequeno-almoço em chávenas de pão)

Nothing could be easier...although it takes a bit in the oven its easy and yummie. Recipe for 4 cups
4 eggs, 8 slices of chorizo, or any other pork sausage of your choice
Half red and green peppers
a few sprinkles of origanum
Pre-heat the oven to 200ºC
Cut a circle on top of the bread, remove a bit of the inner part of the bread
Put the pork filling chopped in small pieces first, then the peppers, save a few to sprinkle on top of the egg, ok, now comes the raw on top of all that an sprinkle some origanum, the few dices of red pepper and a bit of salt.

Take it to the oven and it should be done in 30 minutes or less, it depends on how you like your eggs...keep an eye on the egg yolks.

"My" pork chop suey

For 10 portions
Ingredients:
1/2 pork tenderloin chopped in small strips
2 chopped onions, 4 garlic cloves
1 red pepper, 1 green pepper
1 can of green beans
1 can of soybeans
soy sauce
2 tablespoons of cornstarch
500ml chiken broth
To marinate the pork: 3 tablespoons of olive oil, 3 or 4 pinches of sea salt, 1 table spoon of coriander. Let it sit for 20 minutes, then put it all in a frying pan and let it fry, stir to make sure they all get to the hot side of the pan, then take it out. Put another pan, deep and large and put the onions, garlic, peppers, soybeans, green beans with a little bit of olive oil, let it sit then pour 1 cup of soy sauce and the chicken broth and let it boil, then add the cornstarch, simmer it avoiding lumps, then put the meat inside adding a bit more soysauce if you like. Also add more cornstarch if its needed to achieve a good creamy(but not too much) point.
Serve with chinese noodles
